Winter Warmer: Grilled Cheese

I can’t wait until winter, but I don’t want to cook soup or stew right now. My anxiety is sky high right now and I’m in need of some comfort food. A comfort food I discovered after going vegan was a grilled cheese sandwich. It’s warming and winter and comforting in summer.

In winter I might serve this with soup, but I didn’t feel like making soup, or eating it. I made some Brussels sprouts in my air fryer. I only had frozen ones on hand and cooked those.


Grilled Cheese


  • Two Slices Your Favorite Bread
  • Two Slices Follow Your Heart Cheese
  • Vegan Butter for greasing pan


  1. Grease pan with butter
  2. Place one slice of bread down in butter. Place 2 cheese slices on bread. Top with other slice of bread
  3. Cook on low or medium heat until bread is toasty and cheese is melty. You’ll have to flip the bread so both sides get toasty.

Air Fryer Brussels Sprouts


  • 8oz Frozen Brussels Sprouts (I like the little ones)
  • 2 tsp Italian seasoning
  • Red Pepper Flakes to Taste
  • Cooking Spray


  1. Place all veggies and seasoning in air fryer basket.
  2. Spray with cooking spray
  3. Cook at 400 (f) for about 20 minutes, until Brussels sprouts are soft and browned.




Inspired Tacos

I’m off the daily prompt, but I’m sticking to the weekly theme. Tacos are an amazing food. But that makes these tacos inspired? They’re inspired by the foods my special person and I both love. We love Brussels Sprouts. We love black beans. We love tacos. The first time we ever cooked together we made tacos.

Inspired Tacos

  • One recipe black beans (you can find my black bean tacos here)
  • Taco Roasted Brussels Sprouts
  • Air Fryer Corn
  • Your Favorite Toppings
  • Your Favorite Style of Tortilla

Taco Roasted Brussels Sprouts

  • One Package of Brussels Sprouts
  • Cooking Spray
  • Taco Seasoning
  • Red Pepper Flakes

Preheat oven to 350. Cut the nubs off Brussels Sprouts and half or quarter them (depending on size). Spray with cooking spray and season with taco seasoning and red pepper flakes to taste.

Roast for about 30 minutes until the outside edges are crispy and the sprouts are easily pierced with a fork.

Air Fryer Corn

  • 1-2 Ears of Corn
  • Your Favorite Vegan Butter
  • Taco Seasoning

Cut your corn cobs so they fit in your air fryer (I had to cut mine in half). Rub butter over the corn and sprinkle with taco seasoning. Set the temp to 395 and cook for 20 minutes, rotating the corn once about half way through the cooking time. When the corn is done some of the kernels should be nice and brown and roasty.

Carefully run a knife along the corn cob to slice the kernels off and add corn to tacos.
