Road Trip Snacks

Today’s prompt is road trip snacks. When traveling I almost always do a road trip, in part because it’s more affordable. My car is a manual transmission, so all my road trip snacks need to be easy to eat as well.

My go to snack while on a road trip is the simple Luna Bar. I know bars like this aren’t always the best thing, but when you travel sometimes you need something easy to heat that has a bit of nutritional value.

Trail mix is another favorite snack. You can make it however you want. For a non-summer road trip I enjoy almonds, cherries, and chocolate chips.


Chili Lime Popcorn

Today’s prompt is to make something savory and salt free. I don’t like salty foods, so pretty much everything on this blog is salt free or limited salt. I decided to make one of the few things I enjoy with a bit of salt and make it salt free.

I got an air popper for Christmas and I usually put about 1/4-1/2 teaspoon of salt on each batch of popcorn I make, but here’s a salt free option with some extra flavor.

Chili Lime Popcorn

  • Popcorn popped using your favorite method
  • 4 Tablespoons melted vegan butter substitute
  • Zest of one lime
  • 1 Tablespoon chili powder

While popcorn is popping melt vegan butter. Once butter is melted mix in chili powder and lime zest. Drizzle the mix over the popcorn and give it a good toss to distribute everything.

Cinnamon Pecans

I’m back on prompt today! Today’s prompt is snacks without single-use wrappers. A lot of homemade snacks are the best way to go for this. One of my favorites is the Cinnamon Pecans from Chocolate Covered Katie. You can find the recipe here. I was running low on spices, but I think these would be really good if you used a chai spice blend.

The pecans make a nice gift or an easy-to-eat snack. I like eating nuts when I work. I spend lots of time driving, so anything easy to eat is a win for me. They’re also really easy to make, which is a huge plus.

The hardest part about having these pecans around is saving them for a snack.

Storm Update: As of now the storm is likely to go south of us; however we really don’t know. We’re probably still going to get wind and rain. With a chance for losing power. I have tomorrow’s post ready to go. Hopefully, I’ll be able to post this weekend too.

I Spy Something Red: A Three Berry Smoothie

Day 7 of Vegan MoFo and we’re supposed to pick a color, any color. My plan had been to do something purple, since it’s my favorite color, but life doesn’t always go according to plan.

It’s still really hot here in NC. We still have days over 90F. Sometimes you don’t want to cook anything, here’s my go to smoothie. It makes a great breakfast or afternoon pick-me-up that can help beat the heat.

Three Berry Smoothie

  • 1/3 Cup Juice of Choice
  • One Cup Frozen Three Berry Blend (Blueberry, Blackberry and Raspberry; mine is from Costco).
  • One Serving Vegan Yogurt of Choice (I use Silk Soy Yogurt)

Combine all ingredients in blender and blend together. You might need to use more or less liquid depending on your blender.
